Egg Drop Soup

Easy & Quick Egg Drop Soup Recipe (Keto, Low Carb, Egg Fast, Whole30)

Ingredients:

  • 2 tbsp salted butter (or ghee)
  • 2 cups chicken broth
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 1 tsp coconut aminos
  • 2 eggs

Toppings (optional):

  • green onions
  • hot sauce

 Directions:

  • Over medium heat in a saucepan, melt together butter and chicken stock until butter if fully melted
  • Add ginger, garlic and coconut aminos and mix into broth mixture
  • In a separate bowl beat the eggs
  • Stir the hot broth mixture in a fast moving circle then slowly drizzle in the beaten eggs
  • Let eggs cook for about 1 minute then remove from heat
  • Top soup with green onions & hot sauce
  • This makes one serving but can easily be doubled or tripled and tastes great the next day!
