Low Carb Maple Granola Recipe

1/2 cup chopped pecans
1/2 cup silvered almonds
1 cup coconut flakes
1/2 cup hemp hearts
1/2 cup flaxseed meal
1/3 cup melted butter
1/3 cup sugar free maple syrup
  • Preheat oven to 300 degrees
  • In a small bowl, melt butter in microwave then mix with sugar free syrup
  • In a large bowl mix together remaining ingredients then evenly coat with the butter/syrup mixture
  • Place a piece of parchment paper on a large cookie sheet
  • Press mixture onto cookie sheet, pressing it down to make it stick together
  • Sprinkle mixture with salt and cinnamon
  • Bake for about an hour (or until crisp) stirring mixture every 15 minutes
Perfect as a snack on it’s own, as a low carb cereal topped with almond milk or sprinkled on top of yogurt or cottage cheese!
